He has been a past chair of the Kentucky Distiller's Association and been on the technical committee of Distilled Spirits Council of the U.S. In addition to providing engineering consultation for systems of many bourbon and Tennessee Whiskey distillers, he has helped beverage facilities in Russia, Scotland, China, Mexico, Dominican Republic and Canada. Intoxicology is please to announce Victor Bouvier, Brand Ambassador for Cognac Ferrand will be tasting Citadelle Classic Gin and the Citadelle Gin Reserve. Citadelle Classic has a delicate and fragrant nose of fresh flowers, jasmine, honeysuckle and cinnamon. After a few moments, stronger, more herbaceous aromas of anise, grains of paradise and cinnamon develop in a most remarkable way. The appetizing bouquet is reminiscent of gardens in springtime. On the palate, juniper gives way to a voluptuous complexity redolent of fresh flowers, leading into an elegant, round and highly refined finish.

The Reserve sleeps for several months in small, seasoned French oak barrels before being bottled. The Solera method is used for the Reserve, Citadelle is the first Gin to employ this method most often found in sherry, Madeira, Marsala; balsamic vinegars; Spanish brandy; and rums. Once the gin has spent some time in casks, a portion of the gin from each cask will be moved into a large vat for blending, and new gin will be added to the remaining gin in the cask. The result is a gin with notes of wood and vanilla while still being very juniper forward.

They work with some of the best known wineries in California, including Ramey, Trefethen, Ladera & Cobblestone, and utilize the aromatic and flavor profile of Chardonnay, Pinot Noir, and Cabernet Sauvignon to achieve a very unique finish – what they call the “Dual Cask Difference”. Their Rye is spicy, yet velvety smooth, the Bourbon is rich, with an unexpected aromatic complexity.
